   Chop aromatics

   Add the garlic, chilies, ginger, and cilantro to a food processor. Pulse about 5 times, or until everything is coarsely chopped but still has some texture.

   Add sugar

   Add the sugar to the food processor with the chopped aromatics. Pulse another 5 times, just until it's mixed in.

   Blend liquids

   Pour in the fish sauce and lime juice. Pulse 3 times, enough to combine everything and ensure the sugar has dissolved into the liquid.

   Adjust seasoning

   Give the sauce a taste. If you like it spicier, add more chilies; if you prefer it sweeter, add more sugar, or more lime for tang.

   It should hit all the notes: spicy, sweet, sour, and salty.
