Fried calamari
This recipe gives you crisp, fried squid rings, ready to be dipped in a simple garlic mayonnaise. The squid is cut into rings, coated in seasoned flour with capers, then quickly fried until golden. It's a dish that comes together fairly fast, especially once the oil is hot. Serve with plenty of lemon wedges for squeezing over.

Cut and Coat Squid
Start by cutting the squid into rings, about ½cm thick. In a freezer bag, combine the plain flour with a generous amount of salt and pepper, then add the capers. Shake the bag well to mix everything, then add the squid rings and shake again until each piece is evenly coated in the seasoned flour. - 02
Mix Garlic Mayonnaise
In a small serving bowl, stir together the crushed garlic and mayonnaise. Set this aside for serving.
