Breadfruit in Butter Sauce
This recipe pairs tender boiled breadfruit with a rich, tangy butter sauce. You'll start by simmering the breadfruit until it's soft, then drain it. While that's happening, brown onions in butter before building a quick sauce with garlic, tomatoes, and a bright squeeze of lime. Pour the warm sauce over the sliced breadfruit and finish with fresh parsley for a simple, satisfying meal.

Prepare and Boil Breadfruit
First, cut the breadfruit in half, scoop out the seeds from the core, and peel it. Boil the prepared breadfruit in salted water with a little onion and olive oil over high heat until it's tender when pierced with a fork. Once cooked, drain it well. - 02
Make the Butter Sauce
While the breadfruit cooks, melt the 125g butter in a frying pan over medium heat and lightly brown the onion rings. Stir in the 1 tablespoon chopped garlic, 500ml tinned tomatoes, 3 tablespoons parsley, 1 tablespoon lime juice, salt, and pepper, then sauté for a couple more minutes until fragrant. Pour in the 250ml water, bring the sauce to a boil, then reduce the heat and simmer for 5–10 minutes, allowing the flavors to meld.
