Tropical Ice Pops

Pour the blended fruit mixture into your popsicle moulds, dividing it evenly and filling each mould about halfway.
In a separate small bowl, whisk together the coconut milk, 1/4 cup coconut beverage, and 2 to 3 tablespoons maple syrup. Taste and adjust the maple syrup if you prefer a sweeter coconut layer.
Carefully pour this coconut mixture over the fruit layer in each mould, then insert a popsicle stick into each, leaving about a quarter of the stick above the mould. Freeze the popsicles for 2 to 3 hours, or until they're completely solid. To remove them, run the moulds under warm to hot water for about 5 to 10 seconds before gently pulling out the ice pops.
