Lay out an egg roll wrap so one corner points towards you. Place about 2 tablespoons of the filling just above the bottom corner. Fold that bottom corner up over the filling, then fold in each side of the wrap. Roll it up tightly towards the top corner. Before you reach the very end, dab a little water on your finger and spread it along the top corner to seal the roll.
Heat oil for deep frying to 320 degrees. Carefully lower the egg rolls into the hot oil and fry for about 3 minutes, or until they're crispy and a deep golden brown. Work in batches if needed to avoid overcrowding the pan.
