Kafteji
This recipe is for Kafteji, a hearty Tunisian hash that brings together a variety of textures and flavors. It involves frying potatoes, pumpkin, and onions, then grilling and peeling peppers. All the cooked vegetables are mixed with whisked eggs and gently cooked until set. The final dish is chopped together on a board, seasoned, and ready to serve.

Fry Potatoes
Pour about 1 to 2 cm of olive oil into a large pan and heat it until it's very hot. Add the potato cubes and fry for about 20 minutes, turning them occasionally, until they're golden brown and tender. Transfer the fried potatoes to kitchen paper to drain any excess oil.
