Lemon Vegetable Soup

   Cook Carrots and Sweet Potato

   In a large pot, bring the vegetable stock to a slow simmer over medium heat. While it's heating, dice the sweet potato and carrots into small, spoon-friendly pieces. Once the stock is simmering, add the sweet potato and carrots and cook for 3 to 4 minutes.

   Prepare the Kale

   Wash and rinse the kale thoroughly. Tear the leaves off the thick stems and rip them into bite-sized pieces.

   Simmer and Serve

   Add the prepared kale, cannellini beans, thyme, oregano, vegeta seasoning, and a generous pinch of salt and pepper to the pot. Let everything cook for another 1 to 2 minutes, just until the kale wilts and turns bright green.

   Once the soup is ready, stir in the juice of 1 lemon right before serving for a bright finish.
