Haft Mewa Recipe
Haft Mewa is a traditional Persian New Year dish, a sweet soup or salad of seven dried fruits and nuts. This version combines apricots, two kinds of raisins, walnuts, almonds, pistachios, and cherries, all steeped in water with a hint of rose water. The dried fruits are rehydrated and the nuts are blanched and peeled, then everything rests together for two days in the fridge. This long soak allows the flavors to deepen and the liquid to become wonderfully syrupy.

Soak Dried Fruits
Give the dried apricots and both types of raisins a good wash, then transfer them to a bowl. Cover the fruit with cold water, about 5cm above the top of the fruit. - 02
Blanch and Peel Nuts
In a separate bowl, combine the walnuts, pistachios, and almonds. Pour boiling water over them and let them soak until the skins soften. This can take a little time, but it makes peeling them much easier. Once softened, peel off all the skins — it's a bit fiddly, but worth it for the texture. Discard the soaking water.
