Greek Spring Salad: Prasini Salata Recipe

1. 01

   Prepare Greens and Herbs

Start by washing and thoroughly drying your 1 large head of lettuce. Tear or chop it into bite-sized pieces and transfer to a large salad bowl. Wash and finely chop the 1/2 bunch of dill, then add it to the bowl. Trim and thinly slice all 6 scallions, using both the white and green parts, and add them in.

   Prepare Salad Components

Wash the 1/3 cucumber and slice it into thin half-moons or dice it, whichever you prefer, then add it to the bowl with the lettuce. Halve the 1 cup of grapes and add them in. Finally, crumble the 6 ounces of feta over the other ingredients in the bowl.

   Whisk the Dressing

In a small bowl, whisk together the 1/4 cup extra virgin olive oil, 1/2 juice of lemon, 2 Tablespoons red wine vinegar, and 1 teaspoon honey. Season the dressing with 1 serving sea salt. Whisk vigorously until everything is well combined and the dressing looks slightly emulsified, a little cloudy.

   Assemble and Serve

Pour the dressing over the salad ingredients in the large bowl. Toss gently to make sure all the components, especially the lettuce, are evenly coated. You can serve it right away, or if you have time, chill it for 10-15 minutes to let the flavors meld a bit before serving.
