   Prepare the Strawberries

   Purée half the strawberries in a blender until smooth. Chop the remaining strawberries into bite-sized pieces, setting aside four whole strawberries for garnishing later.

   Assemble the Mess

   Whip the 400 ml double cream in a cold bowl until it forms stiff peaks. Gently fold in the strawberry purée and the crushed meringue nests.

   Finally, add the chopped strawberries and the 1 tablespoon ginger cordial, if you're using it, folding just until combined.

   Chill and Serve

   Spoon equal amounts of the mixture into four cold wine glasses. Serve immediately, garnished with the reserved strawberries and a sprig of fresh mint.
