Zapiekanki are Polish open-faced sandwiches, built on crisp baguette halves, topped with a savory mushroom and onion mixture, then loaded with cheese and cured meats. They're baked until the cheese is bubbly and golden, then finished with fried onions, fresh herbs, and a zig-zag of ketchup. The baguette gets a quick bake first to ensure a sturdy base for all the toppings.

Bake the Baguettes
Preheat your oven to 200°C (180°C fan/gas 6). Place the baguettes on a baking tray and bake for 8–10 minutes, just until they're lightly crisp. Let them cool slightly before handling. - 02
Cook Mushroom Mixture
In a pan over low heat, melt 2 teaspoons of butter with 1 teaspoon of oil. Add the chopped onion and cook for about 5 minutes until it's soft and translucent. Stir in the mushrooms, then turn the heat to medium and continue cooking for another 5–10 minutes. You want the mushrooms to soften and all their liquid to evaporate. Add the garlic and cook for another 1–2 minutes, just until it's fragrant. Season with salt and pepper, then stir in the mayonnaise and take the pan off the heat.
