Vietnamese-style caramel pork

Brown the Pork
Heat 1 tablespoon of the ground nut oil in a wok over high heat. Working in batches, stir-fry the pork shoulder until it's browned all over, then remove with a slotted spoon and set aside. - 02
Sauté Aromatics
Turn the heat down to low and add the remaining oil to the wok. Stir in the chopped shallots, ground ginger, and red chili, cooking for a couple of minutes until they just start to soften and become fragrant.
