Activate the Yeast
Sift the flour into a large bowl, then make a well in the center and sprinkle in the yeast. Pour 125ml water over the yeast, then gently flick flour from the sides of the well over the liquid to create a thin layer. Cover the bowl and let it rise in a warm spot for 15 minutes, until small cracks appear on the surface of the flour layer. - 02
Knead and Rise
Add another 250ml water and 1 teaspoon salt to the bowl, mixing everything with your hands. Knead the dough for about 10 minutes, until it feels elastic and is no longer sticky; add a little more flour if you need it.
Cover the dough again and let it rise in a warm place for another 30 minutes, or until it has doubled in size.
