1. 01

   Season the Trout

   Before cooking, squeeze lemon juice over the skin and inside the cavity of each fish. Season generously all over with salt and ground black pepper, then tuck a thyme sprig into each cavity.

   Wrap with Bacon

   Gently stretch each bacon rasher using the back of a knife—this makes it more pliable and helps it cling to the fish. Then, wrap two rashers around each trout.

   Prepare for Baking

   Lightly grease a shallow ovenproof dish with butter. Arrange the fish in the dish, making sure the loose ends of the bacon are tucked underneath to keep them from unwinding during baking.

   Bake the Fish

   Bake the trout in an oven preheated to 200°C for 15 to 20 minutes.

   The bacon should be crisp and starting to brown, and the fish flesh should flake easily when tested with the point of a sharp knife.

   Serve Immediately

   Transfer the hot fish to warmed individual plates. Garnish with chopped parsley and fresh thyme sprigs, and serve immediately with lemon wedges on the side for squeezing.
