Prepare the Nori and Rice
To start your sushi rolls, lay a nori sheet on your bamboo mat with the shiny side facing down. Dip your hands in the vinegared water (this keeps the rice from sticking), then pat handfuls of rice onto the nori in an even layer about 1cm thick. Leave the edge furthest from you clear — this will help seal the roll.
