Summer Pesto Noodle Salad Recipe

Spiralize the 2 large summer squash using Blade B (or your preferred noodle blade). Once you have a pile of long squash strands, give them several rough chops with a knife; this makes them much easier to eat without wrestling with super-long noodles.

Don't discard the ends of the squash that didn't make it through the spiralizer; chop them into small pieces and add them to your bowl. If you don't have a spiralizer, a julienne peeler works for thinner noodles, or a regular peeler for wider ribbons.
