Stuffed plantain cups
These plantain cups are made from green plantains, twice-fried for a crisp exterior and tender interior. The first fry softens them, making them easy to press into a cup shape using a citrus squeezer. After a second dip in hot oil, they become golden and sturdy enough to hold your favorite savory or sweet filling. They're a great base for anything from shredded meat to a simple salsa.
