Bake the Bacon
Preheat your oven to 300 degrees. Arrange the bacon slices on a baking sheet lined with foil; this makes cleanup much easier.
Switch the palette to suit the room. Your choice is saved locally.


Bake the bacon for 30 minutes, flipping it once halfway through, until it's crisp and golden. Let it cool on the baking sheet; it will get even crispier as it cools.
While the bacon bakes, whisk together the flax seed oil, balsamic vinegar, whole grain mustard, and a pinch of salt and pepper in a small bowl. Set this aside until you're ready to dress the salad.
Pour the dressing over the salad and toss again until the greens and other ingredients are evenly coated.
Divide the salad among four plates. Finish each serving with slices of avocado and a sprinkle of crushed pretzels for extra crunch.
