Spiced smoky barbecued chicken

Make the Marinade
Start by smashing the garlic with a little salt in a pestle and mortar until it forms a rough paste. If you don't have one, a mini food processor works just as well.
Stir in the lemon zest and juice, 2 tablespoons curry powder, a pinch of chili flakes, 3 tablespoons olive oil, and a good grinding of black pepper. Mix everything until you have a thick, fragrant paste.

Barbecue the Chicken
Toss the chicken thighs in the marinade, ensuring each piece is well coated. Set them aside to soak up the flavors while you light your barbecue.
Once the barbecue is hot, lay the bunches of rosemary and thyme directly on the grill grates. Place the chicken, skin side up, on top of the smouldering herbs. If your barbecue has a lid, close it and cook for about 10 minutes, until the chicken starts to take on some color and a smoky scent.
Flip the chicken and continue to cook for another 20-30 minutes, turning occasionally, until the skin is lightly charred from the herbs and the meat is cooked through to the bone.
