Spanish Tortilla
A Spanish tortilla is a hearty egg and potato dish, cooked slowly in a pan until it's set and golden. The secret is to gently soften the onions and potatoes in olive oil and butter until they're almost melting before you fold them into the beaten eggs. Serve it warm or at room temperature, perhaps with a simple side of toasted baguette rubbed with raw garlic and topped with fresh grated tomato.

Cook Onions and Potatoes
Set a large non-stick frying pan over low heat. Cook the sliced onion in 4 tablespoons of olive oil and 25g of butter until it's very soft and translucent, without letting it brown; this usually takes about 15 minutes. Stir in the 400g of potatoes, cover the pan, and continue to cook for another 15 to 20 minutes, stirring occasionally to ensure even cooking.
