Soy Ginger Glazed Halibut with Ginger Peach Relish

Combine the soy sauce, white wine, olive oil, and 1 tablespoon of the chopped ginger in a blender. Blend until the mixture is completely smooth; this helps the ginger's flavor really infuse into the marinade.
Transfer the halibut fillets and the marinade to a zip-top bag or a covered bowl. Let the fish marinate for at least 20 minutes, or for several hours if you have the time to prep ahead. When you're ready to cook, preheat your oven to broil. Once warm, transfer the fish and all the marinade to a casserole dish.
Place the casserole dish on one of the top racks under the broiler. Cook for about 10 to 12 minutes, until the top of the fish develops a nice brown glaze and it's cooked through. The fish should flake easily with a fork.
While the fish broils, prepare the relish: In a bowl, combine the chopped peach, red onion, jalapeño, apple cider vinegar, the juice of the half lime, and the remaining 1 tablespoon of ginger. Stir everything together and refrigerate until you're ready to serve. Letting the relish sit for a few hours allows the flavors to meld.
