Soba Noodle In Kombu Dashi With Teriyaki Salmon

Soak the Kombu
To begin the kombu dashi, soak the dried kelp in 500 ml of water for at least 2 hours. This slow soak helps draw out its deep umami.
Switch the palette to suit the room. Your choice is saved locally.


Transfer the soaked kombu and water to a pot. Set it over medium heat and bring it just to a boil; as soon as you see small bubbles breaking the surface, turn off the heat.
Carefully lift out the kombu with a strainer. The clear liquid left behind is your dashi. You can leave a small piece of kombu in the soup if you want a more pronounced flavor.
To serve, gently warm the kombu dashi until steaming. Divide the cooked soba noodles evenly between two serving bowls.
Ladle a generous amount of the warm dashi over the noodles in each bowl.
