Sichuan Style Stir-Fried Chinese Long Beans
This quick stir-fry brings long beans together with the signature heat of dried chilies and the buzzing, citrusy notes of Sichuan pepper. It comes together in about fifteen minutes, making it a fast side dish for four. A splash of soy sauce and sesame oil finishes it off, adding depth to the spicy, savory beans.

Chinese long beans come in both green and purple varieties. Both have similar textures and flavors, so use whichever you can find. - 02
Pick Your Pan
If you don't have a wok, a sturdy, large sauté pan with at least a two-inch lip will work just fine for stir-frying.
