Shrimp With Snow Peas
This quick shrimp stir-fry with crisp snow peas comes together in under an hour, with most of that time spent marinating. The shrimp gets a brief soak in sherry and cornstarch, then stir-fried with fragrant ginger and garlic. Finish it with a splash of sesame oil and serve over steamed rice for a simple, satisfying meal.

Marinate the Shrimp
In a large bowl, whisk together the cornstarch, dry sherry, and kosher salt. Add the shrimp, tossing to coat each piece evenly. Let the shrimp marinate for 15 to 20 minutes while you prep the rest of your ingredients. - 02
Sauté Ginger and Garlic
Heat a wok or large sauté pan over high heat for about 1 minute. Pour in the peanut oil and let it get hot, around 30 seconds, until it shimmers. Add the ground ginger and minced garlic, stirring constantly for about 30 seconds until fragrant.
