Roasted Alaskan Salmon with Cherries

Preheat your oven to 350°F. In a large bowl, toss together the cherries, lemon juice, honey, and thyme.
Arrange the salmon fillets, skin-side down, on a large baking sheet lined with parchment paper or foil. Sprinkle the fish with a pinch of sea salt and black pepper. Scatter the cherry mixture over and around the salmon, then bake for 12-15 minutes. Switch the oven to broil and cook for an additional 3 minutes, until the salmon is just cooked through and the cherries are juicy and caramelized. The thickest part of the fish should reach an internal temperature of 131°F on an instant-read thermometer.
