Penicillin Recipe

In a shaker, combine the 2 oz blended Scotch, 3/4 oz lemon juice, 2 tsp honey syrup, and 2 tsp ginger syrup with ice. Shake until the shaker is frosty and the liquid is well-chilled.

Strain the mixture over a large ice cube (or several cubes) into a chilled rocks glass. Carefully float the 1/4 oz Islay single malt Scotch on top; you can do this by gently pouring it over the back of a spoon held just above the drink's surface. Garnish with a piece of candied ginger.
