Make the Dressing
In a small bowl, combine 2 tablespoons of the reserved oil from the marinated feta with the olive oil, cider apple vinegar, and peach juice. Season with salt and pepper, then set aside.
Tear the slices of Parma ham into smaller pieces. In a large bowl, toss the ham with the mesclun leaves and sliced peaches.
