Papas Chorreadas is a comforting Colombian dish featuring tender boiled potatoes smothered in a rich, creamy sauce. While the potatoes simmer until soft, you'll quickly build a sauce with sautéed tomatoes and scallions, seasoned with garlic and cumin. Boil the Potatoes
Place the red potatoes and chicken stock cube in a medium saucepan. Cover them with water, bring to a boil, and cook for about 30 minutes, or until the potatoes are easily pierced with a fork. Drain the water and set the cooked potatoes aside. - 02
Sauté Aromatics and Spices
While the potatoes are boiling, heat the 1 tablespoon vegetable oil and 1 tablespoon butter in a frying pan over medium heat. Add the chopped scallions and tomatoes, stir, and cook for about 7 minutes, until the tomatoes start to break down and the scallions soften. Stir in the garlic powder, cumin, salt, and pepper, then cook for another 2 minutes, until fragrant.
