Pan-fried hake, white bean & chorizo broth

Simmer the Beans
Drain the dried white beans, then tip them into a large pan with 2 litres of water. Add the whole garlic cloves, bay leaves, and thyme, then simmer for 30 minutes, or until the beans are cooked through and tender. Take the pan off the heat and set aside.
