Method

Heat the oil
Heat 2 tbsp. of the olive oil in a saucepan over medium-high heat. - 02
Sauté onion, garlic, pepper
Add the onion to the hot oil and sauté for 1 minute, until it just starts to soften. Stir in the garlic and red pepper flakes, letting them cook for another minute until fragrant. - 03
Mash anchovies
Add the anchovy fillets and about half the oil from their can. Mash everything together in the pan with the back of your spoon until it forms a slightly chunky paste. The anchovies will dissolve into the sauce, adding a deep, savory note. - 04
Cook mushrooms and herbs
Toss in the mushrooms and basil. Cover the pan and lower the heat.
Let the mushrooms cook until they release their liquid. This liquid will become part of the sauce, concentrating its flavor.
- 05
Uncover and thin sauce
Remove the lid, stir, and add the remaining 1 tbsp. of olive oil (or the rest of the anchovy oil, if you have it) to thin the sauce slightly. - 06
Stir in tomatoes
Take the pan off the heat and stir in the sundried tomato strips, along with salt and pepper to taste. - 07
Serve with pasta
Pour the sauce over hot pasta, then finish with a generous amount of grated Parmesan cheese.
