Moussaka
This moussaka comes together in about 15 minutes, making it a surprisingly fast weeknight meal. Ground beef gets a quick simmer with tomatoes and potatoes, then it's topped with tender aubergine slices and a creamy, tangy yogurt-egg mixture. A quick blast under the grill finishes it off, turning the topping golden and set.

Brown the Beef
Preheat your grill to high. In a deep, ovenproof frying pan, brown the beef over a high heat for about 5 minutes, breaking it up with a spoon as it cooks.
While the beef cooks, prick the aubergine all over with a fork. Microwave it on High for 3 to 5 minutes, until it feels soft when squeezed. In a separate bowl, whisk together the Greek yogurt, egg, and Parmesan, then season with a pinch of salt and pepper.

Assemble and Grill
Stir the chopped tomatoes, tomato purée, and potatoes into the browned beef, adding a little more seasoning. Let it heat through for a minute or two. Use the back of a spoon to smooth out the beef mixture in the pan, then slice the softened aubergine and arrange the pieces evenly over the top. Pour the yogurt mixture over the aubergine layer, spreading it out to cover everything. Transfer the pan to the grill and cook until the topping is set and has turned a deep golden color.
