First, brew your espresso. While it's brewing, grab a coffee mug and add 1 teaspoon of unsweetened cocoa powder. Spoon 1 teaspoon of honey directly over the cocoa, letting it drizzle into the cup.
Now for the fun part: stir the cocoa and honey together. At first, the cocoa will seem to just coat the honey, creating a dusty, sticky mass that looks like it'll never combine. Keep stirring, and then, almost suddenly, it will come together into a smooth, dark chocolate-like sauce.
Once your espresso is ready, pour the hot coffee directly over the honey-cocoa mixture, stirring continuously until everything is fully dissolved. Serve it with a dollop of cream, if you like.
