Mastawa Lamb and Rice
Mastawa is a lamb and rice dish, slowly simmered until the meat is falling-apart tender, then mixed with creamy yogurt and aromatic spices. The subtle citrus notes from orange peel cut through the richness, while fresh dill and fried garlic add depth. This dish comes together in about 40 minutes, with most of that time being hands-off simmering. Serve it warm, perhaps with some naan bread for scooping.

Simmer the Lamb
Place the lamb, cut into pieces, in a large pan with the onions. Add the turmeric and enough water to cover the meat. Bring the mixture to a boil, then reduce the heat and cook gently until the lamb is very tender and easily pulls away from the bones. - 02
Prepare Orange Peel
While the lamb simmers, cut the orange peel into thin matchstick pieces, making sure to remove as much white pith as possible. Leave the prepared peel to soak in a bowl of water; this helps mellow its bitterness.
