Cook the Bulgur
Tip the bulgur wheat into a small pan, cover it generously with water, and bring it to a boil. Let it simmer for about 10 minutes, until tender. Drain the bulgur thoroughly in a fine-mesh sieve, pressing out any excess water to ensure it's not soggy. - 02
Make the Tzatziki
To prepare the tzatziki, take the grated cucumber and squeeze out as much liquid as you can; this keeps the dip from getting watery. Stir the drained cucumber into the Greek yogurt, then add the chopped mint and a pinch of salt. Give it a good mix.
