Karbonader (Lean Beef Patties) with Caramelized Onions
Karbonader are Norwegian lean beef patties, seasoned simply and pan-fried until browned. The grated onion in the mix keeps them tender, while a touch of cornstarch helps bind them. They're traditionally served with slow-cooked caramelized onions, potatoes, and peas for a hearty dinner, but also make a satisfying lunch on a slice of bread.

Caramelize the Onions
Grate half an onion and set it aside.
Slice the remaining 1 onion and cook it in 1 tablespoon of butter over low to medium heat. Let them cook down slowly until they're deeply caramelized and sweet, which can take a good while.

Mix the Patties
In a bowl, combine the 1 pound of ground beef with the grated onion, 1/2 teaspoon each of salt, pepper, and nutmeg, 1/2 tablespoon of cornstarch, and 50 ml of water. Mix everything until just combined; don't overmix, or the patties can get tough.
