Jiggs Dinner
Jiggs Dinner is a traditional Newfoundland boiled dinner, featuring salt beef, root vegetables, and a creamy pease pudding. The key to this hearty meal is an overnight soak for both the beef and the split peas, which helps mellow the saltiness and rehydrate the peas for a smooth pudding. Everything cooks together in one pot, infusing the vegetables with the savory broth. It's a satisfying spread, especially when served with a drizzle of the cooking liquid.

Soak Beef and Peas
The night before you plan to cook, break the salt beef into large chunks and submerge them in water to soak for at least 8 to 10 hours. In a separate bowl, cover the split peas with water to soak overnight as well.
