Marinate the Chicken
In a large bowl, combine the chicken thighs, all-purpose seasoning, 1 tablespoon of curry powder, onion, green onions, green pepper, garlic cloves, scotch bonnet pepper (if you're using it), and thyme. Mix everything well, making sure all the chicken pieces are thoroughly coated with the seasoning. Cover the bowl and refrigerate for at least 1 hour, or even better, up to overnight for deeper flavor. - 02

Once the chicken has finished marinating, remove the onion, green pepper, and garlic cloves from the chicken pieces and set them aside. You'll add these back into the pot later.
