General Tsos Chicken
This General Tso's chicken features crispy, deep-fried chicken pieces coated in a glossy, sweet-and-spicy sauce. The chicken is marinated in egg whites and cornstarch for a light, crunchy texture once fried. The sauce, a blend of soy, vinegar, ginger, garlic, and a touch of heat, is simmered with broccoli until thickened, then the fried chicken is tossed in right at the end. It comes together quickly once the chicken is fried.

Combine Sauce Ingredients
In a bowl, combine 2 cups of water, 2 tablespoons soy sauce, 2 tablespoons white vinegar, sherry cooking wine, 1/4 teaspoon white pepper, minced ginger, minced garlic, hot pepper, ketchup, hoisin sauce, and sugar. Whisk everything together until well combined, then set the sauce aside. - 02
Marinate the Chicken
In a separate bowl, add the chicken pieces, 1 pinch of salt, 1 pinch of white pepper, 2 egg whites, and 3 tablespoons of corn starch. Toss to coat the chicken evenly.
