Fried Yam and Spicy Mayo

Peel, rinse, and slice the yam. In a pot of boiling water, cook the yam slices for about 2–3 minutes.
Drain them in a sieve, pressing gently with a paper towel to remove any excess water, then sprinkle with salt.
Heat your oil to deep-fry temperature. Carefully add the yam slices and fry until they're golden brown and crisp.
Meanwhile, whisk together the hot sauce and mayonnaise until completely blended. Serve the fried yam immediately with the spicy mayo on the side.
