Fasoliyyeh Bi Z-Zayt (Syrian Green Beans with Olive Oil)
This Syrian green bean dish, Fasoliyyeh Bi Z-Zayt, is a simple, homey preparation where fresh green beans are cooked until very tender. They steam in their own moisture with olive oil and salt, eventually taking on a slightly browned hue. A quick stir-in of fresh garlic and cilantro at the end brightens the whole thing. Serve it warm with pita bread as a light main, or alongside other dishes.

Steam the Green Beans
Toss the 16 ounces of green beans with 1/4 cup olive oil and a dash of salt in a large pot. Cover it with a lid and cook over medium-high heat, stirring occasionally. The goal here isn't to sauté them, but to let them steam in their own moisture until they're very tender and start to turn a brownish color. - 02
Add Aromatics
Stir in the 1 clove garlic and 1/4 cup cilantro, continuing to cook just until the cilantro begins to wilt. This dish is often eaten as a main, scooped up with warm pita bread, or it makes a great side.
