Endive Appetizer With Blue Cheese, Dried Cranberries and Walnuts

Start by toasting the walnuts. In a dry skillet, toast them over medium heat for about two minutes, just until they smell nutty. Transfer them to a plate to cool completely.
While the walnuts cool, arrange the apple slices on one platter and the individual endive leaves on another. In a medium bowl, combine the cooled walnuts, dried cranberries, and crumbled blue cheese.
Spoon about 1 tablespoon of the cheese mixture onto each endive leaf, then add a drop or two of balsamic vinaigrette. Place any remaining cheese mixture in a separate small bowl to serve alongside the apple slices, allowing guests to build their own bites.
