Cut each rack of baby back ribs into several manageable pieces. While you can leave them whole if you prefer the look, smaller sections are often easier to handle on the grill.
Rub the prepared spice mixture generously over all surfaces of the rib sections, ensuring they're well coated.
Once baked, remove the ribs from the oven and let them rest until you're ready to grill.
Meanwhile, for the BBQ sauce, add 1 tablespoon of oil to a saucepan and heat it over medium heat.
Add the minced garlic to the hot oil and sauté for 1 to 2 minutes, until fragrant. Then, add the remaining BBQ sauce ingredients to the saucepan: cider vinegar, soy sauce, tomato puree, molasses, brown sugar, coffee granules, cumin, Dijon mustard, and paprika.
Bring the sauce to a simmer and cook for at least 30 minutes, stirring occasionally, until it thickens slightly and the flavors meld.
