Coffee Cookies

   Prep the oven and sheet

   Preheat your oven to 350 degrees F. Line a cookie sheet with parchment paper.

   Process dry ingredients

   Combine the cake flour, sugar, coffee, walnuts, and salt in a food processor. Pulse for about 10 seconds, or until the walnuts are finely ground and everything is well combined.

   Add oil, form crumbs

   Transfer the mixture to a mixing bowl and pour in the canola oil. Work it with your hands to form a pasty dough, then break it apart into small, distinct crumbs.

   Form the dough

   Add the water and bring the mixture together to form a cohesive dough. If you're using raisins, now's the time to mix them in.

   Shape and bake cookies

   Divide the dough into 16 pieces, then roll each piece into a neat ball. Arrange them on the prepared cookie sheet.

   Bake at 350 degrees F for 25 minutes.

   Cool and dust

   Let the cookies cool on the sheet for about 20 minutes. Once cool, dust them generously with powdered sugar before serving.
