Chicken Roll-Ups With Feta Cheese and Arugula

   Assemble the Roll-Ups

   Lay out each chicken cutlet. Top each with a layer of baby arugula, then crumble the feta cheese right in the center. Starting from the narrow end, roll the chicken up tightly and secure each roll with a toothpick.

   Sear the Chicken

   In a large nonstick ovenproof skillet, heat the olive oil over medium-high heat, swirling to coat the bottom of the pan.

   Place the chicken rolls seam-side down and cook until the bottom is golden brown, about 1 to 2 minutes. Turn the chicken to sear on another side.

   Bake until Cooked

   Transfer the skillet to the oven. Continue cooking until the chicken is opaque throughout, which should take about 10 to 12 minutes.

   Finish and Serve

   Once the chicken is cooked, remove the toothpicks. If you like, slice the chicken crosswise before serving.
