Chicken Mandi
This Chicken Mandi is a one-pot chicken and rice dish, built on a base of whole and ground spices. The chicken gets a quick marinade with turmeric and salt, then it's browned and simmered until tender. Basmati rice cooks directly in the spiced chicken liquid, soaking up all those aromatics. The chicken returns to the pot to steam with the rice, bringing everything together. If you have charcoal, there's an optional step at the end to infuse a subtle smoky aroma.
