   Make the Dough

   Finely grate the potatoes, either by hand or using a food processor. Transfer the grated potatoes to a bowl and mix them with the flour, egg, and salt until a sticky, pliable dough forms. It should be thick enough to hold its shape but still easy to work with.

   Cook the Dumplings

   Bring a large pot of salted water to a rolling boil. Using a halušky maker (or a tilted cutting board and a knife), press or scrape small pieces of the dough directly into the boiling water. Let the dumplings cook until they float to the surface, which usually takes about 2-3 minutes. Scoop them out with a slotted spoon and set them aside in a large bowl.

   Prepare the Toppings

   Chop the bacon into small pieces. Fry the bacon in a skillet over medium heat until it's crispy and the fat has rendered out. If you're using a bryndza substitute, now is the time to mix crumbled feta with a dollop of sour cream to get that characteristic tangy creaminess.

   Assemble and Serve

   Add the bryndza cheese (or your substitute) to the cooked dumplings and toss everything together until the dumplings are well-coated and creamy. Top with the crispy bacon and its drippings. For a bit of freshness and color, garnish with chopped chives or parsley just before serving.
