Finely grate the 1 pound of Cheddar cheese and 1 pound of feta cheese into a large bowl. Add the 1 beaten egg and 5 tablespoons of cornstarch, then toss everything together until well combined. Heat deep fat in a pot or deep fryer until it's hot enough to fry (a small piece of cheese dropped in should sizzle immediately).
