Blackberry Clafoutis

   Prep Oven and Ramekins

   Preheat your oven to 200°C. Butter two ramekins well; you want the clafoutis to release easily.

   Add Blackberries

   Divide the 1 cup of blackberries between the prepared ramekins. If you like, set aside a few berries to dot on top later for a prettier finish.

   Whisk the Batter

   In a medium bowl, combine the 1/4 cup almond meal, 2 tablespoons flour, 3/4 cup milk, 1/2 cup caster sugar, 2 large eggs, 1/2 teaspoon vanilla extract, and 1/4 teaspoon salt.

   Whisk everything together until you have a smooth, lump-free batter. Don't overmix; just get it combined.

   Pour Batter Over Fruit

   Carefully pour the batter over the blackberries in the ramekins. If you reserved any berries, arrange them artfully on top of the batter.

   Bake the Clafoutis

   Place the ramekins on a baking tray (this makes them easier to handle and catches any potential spills). Bake in the middle of the preheated oven for about 30 minutes, or until the tops are puffed and golden brown.

   Cool Briefly

   Once baked, transfer the ramekins to a wire rack. Let them cool for just a few minutes; you want to serve these warm.
