   Combine the juice of 1 lemon, 1/2 cup extra virgin olive oil, and 1 teaspoon kosher salt in a blender or small food processor.

   Add Truffles to Dressing

   Grate half of the 2 ounces of truffles directly into the blender with the dressing base. Set the remaining truffles aside; you'll shave them over the finished salad.

   Blend and Season Dressing

   Blend the dressing until it's thick and creamy. Give it a taste and adjust the salt or the oil-to-lemon ratio as needed.

   Prepare the Lettuce

   Chop the 1 head of romaine lettuce, then wash and thoroughly dry it. Crisp, dry lettuce is key here.

   Toss and Plate Salad

   Toss the prepared lettuce with the truffle Caesar dressing until every leaf is coated, then divide among 4 plates.

   Add Duck Confit

   If you're using it, arrange the 8 ounces of duck confit leg and thigh over the dressed lettuce.
