Bistek
Bistek is a classic Filipino dish featuring thinly sliced beef marinated in a tangy soy-lemon mixture, then simmered until fork-tender. The beef gets a quick sear before braising, and it’s finished with soft, caramelized onions. It’s often served with white rice, letting the savory, slightly sour sauce mingle with every bite. For the best flavor, plan to marinate the beef overnight.

Marinate the Beef
In a bowl, combine the beef with the soy sauce, lemon juice (or calamansi), and a generous pinch of ground black pepper. Stir to coat the beef evenly. Let it marinate for at least 1 hour, or for an even deeper flavor, cover and refrigerate it overnight. - 02
Fry Half the Onions
Heat 2 tablespoons of olive oil in a large pan over medium heat. Add half of the sliced onions and cook, stirring occasionally, until they soften and turn translucent, about 3 to 5 minutes. Remove the softened onions from the pan and set them aside.
